- 4 medium zucchinis
- 1 pound Italian sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved

- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped

- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the flesh, leaving about 1/4 inch border around the edges. Set aside the zucchini boats.
