Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon thyme leaves
  • 2 bay leaves
  • 1 pound baby potatoes, halved
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • Salt and pepper to taste

Directions

  1. Season beef cubes with salt and pepper.
  2. Turn on the Instant Pot to sauté mode and heat olive oil. Brown beef cubes in batches and set aside.
  3. Add onion and garlic to the Instant Pot and sauté until softened.
  4. Deglaze the pot with red wine, scraping up any browned bits from the bottom.
  5. Add beef broth, tomato paste, thyme, bay leaves, and browned beef cubes.
  6. Close the lid and cook on high pressure for 25 minutes. Let the pressure naturally release for 10 minutes before quick releasing.
  7. Add baby potatoes to the Instant Pot and cook on high pressure for 5 minutes.
  8. Meanwhile, prepare creamy mashed potatoes by boiling potatoes until tender, then mashing with heavy cream and butter. Season with salt and pepper.
