Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 5 tablespoons cocoa powder
  • 1 large egg, beaten
  • 1 teaspoon pure vanilla extract
  • 2 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons custard powder
  • 2 cups confectioners' sugar
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • green food coloring (optional)
  • 1 cup semisweet chocolate chips
  • 2 tablespoons unsalted butter

Directions

  1. In a medium-sized bowl, combine the melted butter, granulated sugar, cocoa powder, beaten egg, and vanilla extract. Mix well.
  2. Add the graham cracker crumbs and shredded coconut to the mixture. Stir until all the ingredients are well combined.
  3. Press the mixture evenly into a greased 9x9-inch baking dish, creating the base layer.
  4. In a separate bowl, cream together the softened butter, custard powder, confectioners' sugar, milk, peppermint extract, and green food coloring (if using) until smooth and creamy.
  5. Spread the mint custard filling evenly over the chocolate-coconut base.
  6. In a microwave-safe bowl, melt the chocolate chips and butter together in 30-second intervals, stirring after each interval, until smooth and glossy.
  7. Pour the melted chocolate over the mint custard filling, spreading it out with a spatula to create a smooth chocolate layer.
  8. Refrigerate the bars for at least 3 hours or until set.
  9. Once chilled and set, cut the bars into squares and serve. Enjoy!
