- 2 large sweet potatoes

Directions
- Preheat the oven to 400°F (200°C).
- Poke holes in the sweet potatoes with a fork or knife and microwave for 5-6 minutes, or until tender.
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, and sauté until fragrant and translucent.
- Add the cooked sweet potatoes to the skillet and mash them with a fork or potato masher.
- Stir in the ground cumin, chili powder, and paprika. Cook for an additional 2 minutes to allow the flavors to blend.
- Add the rinsed and drained black beans to the skillet, season with salt and pepper, and stir well. Cook for another 5 minutes, or until heated through.
