Ingredients

  • 1 cup wild rice
  • 2 cups water
  • 1/4 cup red onion, finely diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

Directions

  1. In a medium pot, bring 2 cups of water to a boil. Add the wild rice, cover, and simmer for 30 minutes or until the rice is tender and the water is absorbed.
