Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the Fudge Icing:
  • 1/2 cup unsalted butter
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in the boiling water gradually, a little at a time. The batter will be thin, but that's okay.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. To prepare the fudge icing, melt the butter in a saucepan over medium heat.
  9. Stir in the cocoa powder until smooth and well combined.
  10. Remove the saucepan from heat and gradually add the powdered sugar, milk, and vanilla extract. Stir until the icing is smooth and creamy.
  11. Place one cake layer on a serving plate and spread a generous amount of fudge icing on top.
  12. Gently place the second cake layer on top and frost the entire cake with the remaining fudge icing.
  13. Optional: Garnish with chocolate shavings or sprinkles for added decoration.
  14. Slice and serve this delectable Wellesley Fudge Cake to enjoy its rich chocolate flavor and moist texture.
