Ingredients

  • 1 pound cotechino sausage
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 ounces) diced tomatoes
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped

Directions

  1. Preheat the oven to 325°F (163°C).
  2. Place the cotechino sausage in a large pot and cover with water. Bring to a boil and simmer for 20 minutes.
  3. In a separate large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are tender, about 5 minutes.
  4. Add the diced tomatoes, cannellini beans, chicken broth, dried thyme, salt, and pepper to the pot. Stir well to combine.
  5. Remove the cotechino sausage from the boiling water and add it to the pot with the beans. Cover and transfer to the preheated oven.
