Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 pound smoked sausage, sliced
  • 2 (15 ounce) cans chickpeas, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat oil in a large skillet over medium heat.
  2. Add onion, garlic, bell peppers, oregano, smoked paprika, cumin, red pepper flakes, sea salt, black pepper, and cayenne pepper and sauté for 5 minutes.
  3. Add sliced smoked sausage and cook for an additional 5 minutes.
  4. Stir in chickpeas, diced tomatoes, and parsley and bring to a boil.
  5. Reduce heat to low and simmer for 10 minutes.
  6. Serve warm.
