Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 pound smoked sausage, sliced
- 2 (15 ounce) cans chickpeas, drained and rinsed
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/4 cup chopped fresh parsley
Directions
- Heat oil in a large skillet over medium heat.
- Add onion, garlic, bell peppers, oregano, smoked paprika, cumin, red pepper flakes, sea salt, black pepper, and cayenne pepper and sauté for 5 minutes.
- Add sliced smoked sausage and cook for an additional 5 minutes.
- Stir in chickpeas, diced tomatoes, and parsley and bring to a boil.
- Reduce heat to low and simmer for 10 minutes.
- Serve warm.
