Ingredients

  • 1 ear of corn, husked and cooked
  • 1 large avocado, diced
  • 1/2 red onion, finely diced
  • 1/2 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeno pepper, seeded and diced
  • 1 lime, juiced
  • 1/2 teaspoon sea salt

Directions

  1. Cut the corn off the cob and place in a medium bowl.
  2. Add the diced avocado, red onion, red bell pepper, cilantro, and jalapeno pepper to the bowl.
  3. Squeeze the lime juice over the mixture and season with sea salt.
  4. Mix gently to combine all of the ingredients.
  5. Serve immediately, or chill in the refrigerator for an hour before serving.
