Barbecued Chicken Quesadillas

Ingredients

  • 4 large tortillas
  • 1 cup cooked, shredded barbecued chicken
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons butter, melted

Directions

  1. Preheat the oven to 400 degrees F.
  2. On a large baking sheet, place two of the tortillas. Divide the chicken and cheese equally between the two tortillas, spreading them out to the edges.
  3. Top each tortilla with the remaining two tortillas. Brush the tops of the tortillas with the melted butter.
  4. Bake for 15 to 20 minutes, or until the tortillas are golden brown and the cheese is melted. Remove from the oven and let cool for 5 minutes.
  5. Cut each quesadilla into 4 wedges. Serve with salsa, sour cream, and cilantro.
