Ingredients

  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 1/2 cup white wine
  • 2 cloves garlic, minced
  • 1/2 cup cream cheese
  • 1/2 cup Parmesan cheese
  • 1/4 cup frozen spinach, thawed and drained
  • Salt and pepper to taste

Directions

  1. In a large skillet over medium-high heat, heat the olive oil. Add the salmon fillets and cook for 4 to 5 minutes, flipping once, until the salmon is golden brown and cooked through.
  2. Add the white wine and garlic and cook for an additional 2 minutes. Reduce the heat to low.
  3. Add the cream cheese, Parmesan cheese, and spinach and stir until the cheese has melted and the spinach is heated through. Season with salt and pepper to taste.
  4. Serve the salmon with the spinach sauce over the top.
