Ingredients

  • 2 pounds fresh green beans, trimmed
  • 3 cups distilled white vinegar
  • 2 tablespoons kosher salt
  • 2 tablespoons sugar
  • 1 teaspoon mustard seed
  • 1 teaspoon black peppercorns
  • 2 cloves garlic, peeled and smashed
  • 2 bay leaves

Directions

  1. In a medium saucepan, combine the vinegar, salt, sugar, mustard seed, peppercorns, garlic, and bay leaves.
  2. Bring to a boil, reduce heat to low, and simmer for 5 minutes.
  3. Meanwhile, fill a large bowl with cold water and ice cubes.
  4. Add the green beans to the boiling liquid and cook for 5 minutes.
  5. Using a slotted spoon, transfer the green beans to the bowl of cold water.
  6. Drain the green beans and transfer to clean canning jars.
  7. Pour the hot liquid over the green beans, leaving a 1/2-inch headspace.
  8. Wipe the rims of the jars with a damp cloth.
  9. Place the lids on the jars and process in a boiling water bath for 10 minutes.
  10. Cool completely before serving.
