Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup butter, softened
- 2/3 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup water
- 1 cup fresh cranberries, chopped
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a medium bowl, combine flour, baking soda and salt. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Gradually beat in the flour mixture alternately with the water. Fold in cranberries. Pour batter into prepared loaf pan.
- Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
