Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup butter, softened
  • 2/3 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup water
  • 1 cup fresh cranberries, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a medium bowl, combine flour, baking soda and salt. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Gradually beat in the flour mixture alternately with the water. Fold in cranberries. Pour batter into prepared loaf pan.
  3. Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
