Ingredients
- 3 very ripe bananas, mashed
- 1/3 cup vegetable oil
- 1/2 cup white sugar
- 1/2 cup packed light brown sugar
- 2 large eggs, beaten
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the mashed bananas, oil, white sugar, brown sugar, eggs, and vanilla extract.
- In a separate bowl, sift together the flour, baking soda, and salt. Stir the dry ingredients into the banana mixture until just blended.
- Fold in the chopped walnuts.
- Pour batter into prepared pan.
- Bake in preheated oven for 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
