Ingredients
3 very ripe bananas, mashed
1/3 cup vegetable oil
1/2 cup white sugar
1/2 cup packed light brown sugar
2 large eggs, beaten
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a large bowl, mix together the mashed bananas, oil, white sugar, brown sugar, eggs, and vanilla extract.
In a separate bowl, sift together the flour, baking soda, and salt. Stir the dry ingredients into the banana mixture until just blended.
Fold in the chopped walnuts.
Pour batter into prepared pan.
Bake in preheated oven for 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
