Ingredients

  • 2 cups of eggnog
  • 4 eggs
  • 1/4 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cinnamon
  • 6 cups of cubed French bread
  • 1/2 cup of raisins
  • 1/2 cup of chopped pecans
  • 1/4 cup of butter, melted
  • 1/4 cup of dark rum
  • 1/2 cup of coconut milk
  • 1/4 cup of sugar
  • 1 teaspoon of vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large bowl, beat together the eggnog, eggs, 1/4 cup of sugar, 1 teaspoon of vanilla extract, nutmeg, and cinnamon. Stir in the bread cubes, raisins, and pecans.
  3. Pour the mixture into the prepared baking dish. Drizzle with melted butter. Bake for 30 minutes in the preheated oven, until golden brown.
  4. Meanwhile, in a small saucepan over medium heat, combine the rum, coconut milk, 1/4 cup of sugar, and 1 teaspoon of vanilla extract. Stir until the sugar is dissolved, and simmer for 10 minutes.
  5. Serve the warm bread pudding with a generous drizzle of the coquito sauce.
