Quick Linguine with Turkey Ragu for Two

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 pound ground turkey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (28 ounce) can diced tomatoes
  • 1 bay leaf
  • 1 (8 ounce) package linguine
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the ground turkey and cook until no longer pink, about 5 minutes.
  3. Stir in the oregano, thyme, basil, salt, and pepper and cook for 1 minute.
  4. Add the tomatoes with their juices and the bay leaf. Simmer until the sauce has thickened, about 15 minutes.
  5. Meanwhile, bring a large pot of salted water to a boil. Add the linguine and cook until al dente, about 8 minutes.
  6. Drain the linguine and return to the pot. Add the turkey ragu and Parmesan cheese and toss to combine.
  7. Divide the linguine between two plates and serve.
