Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14 oz) enchilada sauce
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 8 flour tortillas
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender.
  3. Add the cumin, chili powder, paprika, salt, and black pepper to the skillet. Stir until the spices are well combined with the beef mixture.
  4. Pour in the enchilada sauce and simmer for 5 minutes.
  5. In a separate bowl, mix together the sour cream and 1 cup of shredded cheddar cheese.
  6. Spread a spoonful of the meat mixture onto each tortilla, followed by a spoonful of the sour cream mixture. Roll up the tortillas and place them seam-side down in the prepared baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas, and sprinkle the remaining shredded cheddar cheese on top.
