- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14 oz) enchilada sauce
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 8 flour tortillas
- 1/4 cup chopped fresh cilantro, for garnish
Directions
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender.
- Add the cumin, chili powder, paprika, salt, and black pepper to the skillet. Stir until the spices are well combined with the beef mixture.
- Pour in the enchilada sauce and simmer for 5 minutes.
- In a separate bowl, mix together the sour cream and 1 cup of shredded cheddar cheese.
