Ingredients
- 1 bunch kale, washed, dried, and chopped
- 2 cups baby spinach, washed and dried
- 1/4 cup shaved Parmesan cheese
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon dijon mustard
- Salt and pepper to taste
Directions
- In a large bowl, combine the kale and spinach.
- Add the Parmesan cheese, almonds, and cranberries, and toss to combine.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and dijon mustard.
- Season with salt and pepper, to taste.
- Pour the dressing over the salad and toss to combine.
- Serve immediately.
