Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 (14.5-ounce) can diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5-ounce) can black beans, drained and rinsed
- 1 (14.5-ounce) can corn, drained
- 2 cups cooked turkey, shredded or cubed
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/2 cup grated cheese
- Tortilla chips, for serving
Directions
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
- Add the broth, tomatoes, cumin, chili powder, salt, and pepper and bring to a simmer. Simmer for 10 minutes.
- Add the beans, corn, turkey, and salsa and simmer for 5 minutes.
- Stir in the sour cream and cilantro. Simmer for 5 minutes more.
- Serve the soup in individual bowls topped with cheese and tortilla chips.
