Ingredients
- 6 ounces (170 g) butter, softened
- 1/3 cup (80 ml) sugar
- 1 teaspoon (5 ml) vanilla extract
- 2 cups (240 g) all-purpose flour
- 1/4 teaspoon (1.25 ml) salt
- 1/2 cup (120 g) raspberry jam
- 2 eggs
- 1/2 cup (120 ml) almond extract
- 3/4 cup (180 ml) heavy cream
- 1/2 cup (120 g) sliced almonds
Directions
- Preheat oven to 350°F (180°C). Grease a 9-inch (23 cm) square baking pan.
- In a medium bowl, cream together the butter and sugar until light and fluffy. Add the vanilla extract and mix until combined.
- In a separate bowl, mix together the flour and salt. Add to the butter mixture and mix until a soft dough forms.
- Press the dough into the prepared baking pan. Spread the raspberry jam over the dough.
- In a medium bowl, beat together the eggs, almond extract, and heavy cream. Pour over the raspberry jam.
- Sprinkle the sliced almonds over the top. Bake for 35 to 40 minutes, or until the top is golden brown.
- Remove from oven and let cool before serving.
