Ingredients

  • 1 pound beef stew meat, cubed

  • 4 cups beef broth
  • 2 cups water

Directions

  3. Add the carrots, potatoes, beet, and cabbage to the pot. Stir well.
  4. Pour in the beef broth and water. Stir in the tomato paste, bay leaves, sugar, vinegar, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour, or until the vegetables are tender.
  6. Return the beef to the pot and cook for an additional 10 minutes to heat through.
  7. Taste the borscht and adjust the seasoning if needed.
  8. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
