  • 2 tablespoons tomato paste
  • 2 tablespoons paprika
  • 1 teaspoon dried thyme

  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup sour cream
  • Chopped fresh parsley, for garnish

Directions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant.
  2. Add the cooked turkey, red bell pepper, and green bell pepper to the pot. Cook for a few minutes until the peppers are slightly softened.
  3. Stir in the diced tomatoes, tomato paste, paprika, dried thyme, caraway seeds, bay leaf, salt, and pepper. Mix well to combine.
  4. Pour in the chicken broth and bring the mixture to a simmer. Cover the pot and let it cook for about 45 minutes, stirring occasionally.
  5. Remove the bay leaf from the pot. Stir in the sour cream, and cook for an additional 5 minutes.
