- 1 teaspoon dried thyme
- Salt and pepper, to taste
Directions
- Rinse the dried lima beans and remove any debris or damaged beans.
- In a large pot, place the lima beans and cover with water. Bring to a boil over high heat.
- Reduce the heat to low and simmer for 20 minutes. Drain and set aside.
- In the same pot, add the ham hock or diced ham, onion, garlic, carrots, and celery. Sauté until the vegetables are tender and the ham is slightly browned.
