Ingredients
- 6 large bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese
- 1 can diced tomatoes
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Directions
- Preheat the oven to 375°F. Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and garlic, and cook until softened.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
- Remove the skillet from heat and stir in half of the shredded cheese.

- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
