This za'atar chicken salad is a perfect blend of Middle Eastern flavors with a fresh twist. The juicy grilled chicken seasoned with za'atar spice mix pairs perfectly with the crisp garden greens and creamy lemon tahini dressing.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp za'atar spice mix
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions

  1. Season the chicken breasts with za'atar spice mix, salt, and pepper. Grill or pan-sear until cooked through, about 6-8 minutes per side. Let it rest for a few minutes before slicing.
  2. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and fresh parsley.
  3. In a small bowl, whisk together tahini, lemon juice, minced garlic, olive oil, salt, and pepper to make the dressing.
  4. Add the sliced chicken to the salad bowl and drizzle with the lemon tahini dressing. Toss gently to combine.
  5. Divide the salad onto plates and sprinkle with extra feta cheese and parsley for garnish. Serve immediately and enjoy!
