Ingredients

  • 2-3 pound beef tenderloin
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 shallots, minced
  • 1/2 cup dry white wine
  • 1/2 cup beef stock
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. Season the tenderloin generously with salt and pepper.
  3. Heat the olive oil and butter in a large oven-safe skillet over medium-high heat.
  4. Add the tenderloin to the skillet and brown on all sides, about 5 minutes.
  5. Remove the tenderloin from the skillet and set aside.
  6. Add the shallots to the skillet and cook until softened, about 2 minutes.
  7. Add the wine and beef stock and simmer for 3 minutes.
  8. Return the tenderloin to the skillet and spoon the sauce over it.
  9. Cover the skillet and transfer to the oven.
  10. Bake for 25 minutes, or until the desired level of doneness.
  11. Remove the skillet from the oven and let the tenderloin rest for 5 minutes.
  12. Slice the tenderloin into 1-inch thick slices.
  13. Garnish with parsley and serve with the sauce.
