Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1 (14.5 ounce) can diced tomatoes, with juice
  • 1 (15 ounce) can chili beans, drained and rinsed
  • 1 (4 ounce) can diced green chilies
  • 1/2 cup buffalo wing sauce

Directions

  1. Heat the oil in a large pot over medium heat. Add the chicken and cook until lightly browned, about 5 minutes. Add the onion, bell pepper, garlic, chili powder, cumin, oregano, cayenne pepper, and salt. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Stir in the tomatoes, chili beans, green chilies, and wing sauce. Bring to a simmer and cook, stirring occasionally, until the chicken is cooked through and the flavors have blended, about 25 minutes.
  3. Serve hot with your favorite toppings.
