1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 large onion, chopped
1 red bell pepper, seeded and chopped
3 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1 (14.5 ounce) can diced tomatoes, with juice
1 (15 ounce) can chili beans, drained and rinsed
1 (4 ounce) can diced green chilies
1/2 cup buffalo wing sauce
Directions
Heat the oil in a large pot over medium heat. Add the chicken and cook until lightly browned, about 5 minutes. Add the onion, bell pepper, garlic, chili powder, cumin, oregano, cayenne pepper, and salt. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
Stir in the tomatoes, chili beans, green chilies, and wing sauce. Bring to a simmer and cook, stirring occasionally, until the chicken is cooked through and the flavors have blended, about 25 minutes.
