Ingredients

  • 1 large eggplant, diced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 1 clove of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, combine eggplant, bell pepper, olive oil, garlic, oregano, salt, and pepper. Toss to combine.
  4. Spread the eggplant and pepper mixture on the prepared baking sheet and bake for 25 minutes.
  5. Remove from oven and let cool for 10 minutes.
  6. Transfer the eggplant and pepper mixture to a serving bowl and stir in parsley.
  7. Serve warm or chilled with pita bread, crackers, and vegetables.
