Ingredients

  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup sour cream
  • 1/4 cup melted butter, cooled
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely diced onion
  • 1/4 cup finely chopped fresh parsley

Directions

  1. In a large bowl, whisk together the flour and salt.
  2. In a separate bowl, whisk together the eggs, sour cream, and cooled melted butter.
  3. Add the egg mixture to the flour mixture and stir until a dough forms.
  4. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 5 minutes.
  5. Cover the dough with a damp towel and let rest for 30 minutes.
  6. Meanwhile, in a medium bowl, mix together the mashed potatoes, cheese, onion, and parsley.
  7. Divide the dough into 4 pieces and roll each piece into a thin circle. Cut the circles into 3-inch circles.
  8. Place a teaspoon of the filling onto each circle. Fold the circle in half and crimp the edges with a fork to seal.
  9. Heat a large pot of salted water over medium heat and bring to a boil. Add the pierogies and cook for 5 minutes, or until they float to the top.
  10. Remove the pierogies with a slotted spoon and let cool. Serve with your favorite toppings.
