Ingredients
3 cups all-purpose flour, plus more for dusting
1 teaspoon salt
2 eggs
1 cup sour cream
1/4 cup melted butter, cooled
2 cups mashed potatoes
1 cup shredded cheddar cheese
1/2 cup finely diced onion
1/4 cup finely chopped fresh parsley
Directions
In a large bowl, whisk together the flour and salt.
In a separate bowl, whisk together the eggs, sour cream, and cooled melted butter.
Add the egg mixture to the flour mixture and stir until a dough forms.
Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 5 minutes.
Cover the dough with a damp towel and let rest for 30 minutes.
Meanwhile, in a medium bowl, mix together the mashed potatoes, cheese, onion, and parsley.
Divide the dough into 4 pieces and roll each piece into a thin circle. Cut the circles into 3-inch circles.
Place a teaspoon of the filling onto each circle. Fold the circle in half and crimp the edges with a fork to seal.
Heat a large pot of salted water over medium heat and bring to a boil. Add the pierogies and cook for 5 minutes, or until they float to the top.
Remove the pierogies with a slotted spoon and let cool. Serve with your favorite toppings.
