Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
3 cups green beans, cut into 1-inch pieces
3 potatoes, peeled and diced
1 cup vegetable broth
1 teaspoon dried thyme
Salt and pepper, to taste
1/2 cup grated Parmesan cheese
Directions
Preheat oven to 375 degrees F.
Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
Add the green beans and potatoes and cook until the vegetables are lightly browned, about 5 minutes.
Add the vegetable broth, thyme, salt, and pepper. Simmer until the vegetables are tender, about 10 minutes.
Transfer the vegetables to a 9x13-inch baking dish. Sprinkle with the Parmesan cheese.
Bake in the preheated oven until the cheese is melted and golden brown, about 20 minutes.
Serve warm.
