Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups green beans, cut into 1-inch pieces
  • 3 potatoes, peeled and diced
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the green beans and potatoes and cook until the vegetables are lightly browned, about 5 minutes.
  4. Add the vegetable broth, thyme, salt, and pepper. Simmer until the vegetables are tender, about 10 minutes.
  5. Transfer the vegetables to a 9x13-inch baking dish. Sprinkle with the Parmesan cheese.
  6. Bake in the preheated oven until the cheese is melted and golden brown, about 20 minutes.
  7. Serve warm.
