Ingredients
4 Seville Chicken Sausage links
2 cloves of garlic, minced
1/2 teaspoon of smoked paprika
1/2 teaspoon of dried oregano
1/2 teaspoon of salt
1/4 teaspoon of black pepper
2 tablespoons of olive oil
1 large zucchini, sliced into 1/2-inch thick slices
1 pint cherry tomatoes
Directions
Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
In a small bowl, combine the minced garlic, smoked paprika, dried oregano, salt, pepper, and olive oil. Mix together until combined.
Add the Seville Chicken Sausage links to the prepared baking sheet. Brush the garlic-spice mixture onto the chicken sausage.
Add the sliced zucchini and cherry tomatoes to the baking sheet. Brush the remaining garlic-spice mixture onto the vegetables.
Bake for 25 to 30 minutes, or until the chicken sausage is cooked through and the vegetables are tender.
Serve hot, with additional salt and pepper to taste.
