Preheat oven to 375°F (190°C). Grease muffin tin with butter or oil.
In a large bowl, mix together oats, baking powder, baking soda, salt, cinnamon, nutmeg, ginger and cardamom.
In a separate bowl, mix together melted butter, honey, eggs and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in diced peaches.
Spoon batter into greased muffin tin and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
