Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, mix together the flour, baking soda and salt. Set aside.
  3. In a large bowl, cream together the butter and brown sugar until smooth. Beat in eggs one at a time, then stir in the vanilla. Beat in the mashed bananas.
  4. Mix in the dry ingredients until just blended. Fold in the walnuts. Pour batter into prepared pan.
  5. Bake for 45 to 50 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
