Ingredients

  • 1 lb. fresh red snapper fillet, cut into 4 pieces
  • 8-10 grape leaves
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons capers, drained and rinsed
  • 2 tablespoons butter, melted
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 375°F (190°C).
  2. Place grape leaves on a baking sheet and brush lightly with olive oil.
  3. Place red snapper fillets on top of the grape leaves and sprinkle with garlic, capers, and a pinch of sea salt and pepper.
  4. Drizzle with melted butter and fold the grape leaves around the snapper.
  5. Bake in preheated oven for 25-30 minutes, or until the fish is cooked through.
  6. Serve with a side of your favorite vegetables.
