Ingredients

  • 1 lb octopus, cleaned and cut into 1-inch pieces
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 3 tablespoons tomato paste
  • 1/2 cup dry white wine
  • 2 cups chicken broth
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 1 cup orzo
  • 1/2 cup frozen baby peas

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
  3. Add the red pepper flakes and tomato paste and cook for another minute.
  4. Add the octopus pieces and cook for another 5 minutes, stirring occasionally.
  5. Add the wine and chicken broth and bring to a boil.
  6. Reduce the heat and simmer for 15 minutes.
  7. Stir in the parsley, basil, pepper, and salt.
  8. Add the orzo and frozen peas and cook for another 7 minutes, or until the orzo is al dente.
  9. Serve hot.
