Ingredients
- 1 lb octopus, cleaned and cut into 1-inch pieces
- 1/2 cup extra-virgin olive oil
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 3 tablespoons tomato paste
- 1/2 cup dry white wine
- 2 cups chicken broth
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 1 cup orzo
- 1/2 cup frozen baby peas
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
- Add the red pepper flakes and tomato paste and cook for another minute.
- Add the octopus pieces and cook for another 5 minutes, stirring occasionally.
- Add the wine and chicken broth and bring to a boil.
- Reduce the heat and simmer for 15 minutes.
- Stir in the parsley, basil, pepper, and salt.
- Add the orzo and frozen peas and cook for another 7 minutes, or until the orzo is al dente.
- Serve hot.
