Ingredients
1 lb octopus, cleaned and cut into 1-inch pieces
1/2 cup extra-virgin olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
3 tablespoons tomato paste
1/2 cup dry white wine
2 cups chicken broth
1/2 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/4 teaspoon freshly ground black pepper
1/2 teaspoon salt
1 cup orzo
1/2 cup frozen baby peas
Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
Add the red pepper flakes and tomato paste and cook for another minute.
Add the octopus pieces and cook for another 5 minutes, stirring occasionally.
Add the wine and chicken broth and bring to a boil.
Reduce the heat and simmer for 15 minutes.
Stir in the parsley, basil, pepper, and salt.
Add the orzo and frozen peas and cook for another 7 minutes, or until the orzo is al dente.
Serve hot.
