Ingredients
- 1 head of cauliflower
- 1/2 cup of shredded mozzarella cheese
- 1/2 cup of shredded cheddar cheese
- 1/3 cup of Greek yogurt
- 1/4 cup of Parmesan cheese
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Directions
- Preheat oven to 375 degrees F.
- Cut cauliflower into small florets and place in a large bowl.
- In a separate bowl, mix together the shredded mozzarella cheese, cheddar cheese, Greek yogurt, Parmesan cheese, olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Pour the cheese mixture over the cauliflower and mix until all the florets are evenly coated.
- Transfer the cauliflower to a baking dish and spread it into an even layer.
- Bake for 25-30 minutes or until the cauliflower is tender and the cheese is melted and golden brown.
- Garnish with chopped parsley, if desired.
