Ingredients
- 1 cup pumpkin puree
- 1 cup mashed banana
- 1 cup applesauce
- 2 eggs
- 1/2 cup melted butter or oil
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mix together pumpkin, banana, applesauce and eggs until smooth. Add melted butter or oil, brown sugar and white sugar, and mix until combined.
- In a separate bowl, sift together flour, baking soda, cinnamon, nutmeg, cloves, ginger and salt. Gradually add to the pumpkin mixture and mix until just combined.
- Fold in the walnuts, if desired. Spread the batter into the prepared pan.
- Bake in preheated oven for 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Let cool in pan for 10 minutes before removing to cool completely on a wire rack.
