Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon chopped fresh oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup dry white wine
  • 1/2 pound calamari, sliced into rings
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring often, until softened, about 5 minutes.
  2. Add the diced tomatoes, oregano, salt, and pepper and stir to combine. Simmer for 5 minutes.
  3. Add the white wine and bring to a simmer. Add the calamari and simmer for 10 minutes, or until the calamari is cooked through.
  4. Sprinkle with parsley and serve.
