Ingredients
- 1 head of fennel, finely sliced
- 2 celery stalks, finely sliced
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon Dijon mustard
- 1/4 cup olive oil
- Salt and pepper to taste
Directions
- In a large bowl, combine the sliced fennel and celery.
- In a small bowl, whisk together the lemon juice, mustard, olive oil, salt and pepper.
- Pour the dressing over the fennel and celery and toss to combine.
- Serve the coleslaw chilled or at room temperature.
