Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/2 cup canned pumpkin puree
- 1 egg
- 3/4 cup molasses
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1/2 teaspoon salt
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together butter, brown sugar, and white sugar until smooth.
- Mix in pumpkin, egg, and molasses until well blended.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Gradually stir into the pumpkin mixture until just blended.
- Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
