Ingredients

  • 1 lb. breakfast sausage
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large skillet over medium heat, cook sausage, onion and bell pepper until sausage is cooked through and vegetables are tender. Add garlic and cook for 1 minute.
  3. Spread sausage mixture in the bottom of the prepared baking dish. Sprinkle with cheese.
  4. In a medium bowl, whisk together eggs, milk, salt, pepper, oregano, thyme and basil. Pour egg mixture over sausage and cheese.
  5. Bake for 30-35 minutes, or until center is set and top is golden brown.
