Ingredients
- 1 pound of pork tenderloin
- 1/4 cup of olive oil
- 1/2 cup of sliced onions
- 1/4 cup of diced carrots
- 1/2 cup of sliced mushrooms
- 2 cloves of garlic, chopped
- 1/2 cup of dry white wine
- 1 tablespoon of chopped fresh thyme
- 1/4 cup of black truffle sauce
- Salt and pepper to taste
Directions
- Cut the pork tenderloin into 1-inch cubes and season with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the pork cubes and cook until lightly browned, about 5 minutes.
- Add the onions, carrots, mushrooms and garlic to the skillet and cook, stirring occasionally, until the vegetables are lightly browned, about 5 minutes.
- Add the white wine, thyme, and black truffle sauce to the skillet. Cook, stirring occasionally, until the sauce has reduced and thickened, about 10 minutes.
- Serve the pork and vegetables over rice or mashed potatoes.
