Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 2 cups sliced fresh strawberries
- 1/4 cup strawberry preserves
Directions
- Preheat oven to 375°F (190°C). Grease an 8-inch springform pan.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Mix until crumbly and press into the bottom of the prepared pan.
- Bake for 8-10 minutes, or until golden brown. Let cool.
- In a large bowl, combine cream cheese, 1/2 cup sugar, vanilla extract, and lemon juice. Beat until light and fluffy.
- Pour cream cheese mixture over cooled graham cracker crust.
- Arrange sliced strawberries over the top of the cheesecake and spread strawberry preserves over the top.
- Chill for at least 4 hours before serving.
