Ingredients
- 1 lb. linguini
- 2 heads of broccoli, cut into florets
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/4 cup pine nuts
- 2 cloves of garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup freshly squeezed lemon juice
Directions
- Preheat the oven to 400 degrees F. Place the broccoli florets on a baking sheet and toss with the olive oil, salt, and pepper. Roast for 20 minutes, stirring once halfway through.
- Bring a large pot of salted water to a boil and cook the linguini according to the package instructions. Drain and set aside.
- To make the pesto, combine the pine nuts, garlic, Parmesan cheese, parsley, and lemon juice in a food processor and blend until smooth. Add more olive oil if needed.
- Toss the roasted broccoli and pesto with the cooked linguini and serve.
