Ingredients

  • 1 lb. linguini
  • 2 heads of broccoli, cut into florets
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup pine nuts
  • 2 cloves of garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup freshly squeezed lemon juice

Directions

  1. Preheat the oven to 400 degrees F. Place the broccoli florets on a baking sheet and toss with the olive oil, salt, and pepper. Roast for 20 minutes, stirring once halfway through.
  2. Bring a large pot of salted water to a boil and cook the linguini according to the package instructions. Drain and set aside.
  3. To make the pesto, combine the pine nuts, garlic, Parmesan cheese, parsley, and lemon juice in a food processor and blend until smooth. Add more olive oil if needed.
  4. Toss the roasted broccoli and pesto with the cooked linguini and serve.
