Ingredients
- 3 tablespoons olive oil
- 2 pounds stew beef, cut into 1-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons all-purpose flour
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 3 large carrots, sliced
- 3 large potatoes, cut into 1-inch cubes
- 2 cups beef broth
- 1 cup red wine
- 1 bay leaf
Directions
- Heat the oil in a large Dutch oven over medium-high heat.
- Season the beef cubes with the salt and pepper and then sprinkle with the flour.
- Add the beef to the Dutch oven and cook, stirring occasionally, until the beef is browned, about 5 minutes.
- Add the onion, garlic, thyme, and rosemary and cook until the onion is softened, about 5 minutes.
- Stir in the carrots, potatoes, beef broth, red wine, and bay leaf.
- Bring the mixture to a boil, reduce the heat to low, cover, and simmer until the beef is tender, about 1 hour.
- Discard the bay leaf before serving.
