Ingredients

  • 3 tablespoons olive oil
  • 2 pounds stew beef, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons all-purpose flour
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 3 large carrots, sliced
  • 3 large potatoes, cut into 1-inch cubes
  • 2 cups beef broth
  • 1 cup red wine
  • 1 bay leaf

Directions

  1. Heat the oil in a large Dutch oven over medium-high heat.
  2. Season the beef cubes with the salt and pepper and then sprinkle with the flour.
  3. Add the beef to the Dutch oven and cook, stirring occasionally, until the beef is browned, about 5 minutes.
  4. Add the onion, garlic, thyme, and rosemary and cook until the onion is softened, about 5 minutes.
  5. Stir in the carrots, potatoes, beef broth, red wine, and bay leaf.
  6. Bring the mixture to a boil, reduce the heat to low, cover, and simmer until the beef is tender, about 1 hour.
  7. Discard the bay leaf before serving.
