Ingredients
- 1 cup mashed ripe bananas
- 1/2 cup melted butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 cup rolled oats
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12 cup muffin tin.
- In a large bowl, mix together bananas, butter, brown sugar, white sugar, eggs, and vanilla until smooth.
- In a separate bowl, sift together flour, baking soda, baking powder, salt, nutmeg, cinnamon, and ginger.
- Stir the dry ingredients into the banana mixture, then fold in the oats.
- Spoon the batter into the prepared muffin tin.
- Bake for 20 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
