Ingredients

  • 1 cup mashed ripe bananas
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 cup rolled oats

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12 cup muffin tin.
  2. In a large bowl, mix together bananas, butter, brown sugar, white sugar, eggs, and vanilla until smooth.
  3. In a separate bowl, sift together flour, baking soda, baking powder, salt, nutmeg, cinnamon, and ginger.
  4. Stir the dry ingredients into the banana mixture, then fold in the oats.
  5. Spoon the batter into the prepared muffin tin.
  6. Bake for 20 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
