Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 (10 oz) can diced tomatoes with green chiles
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (4 oz) can chopped green chiles
- 1 (1.25 oz) package taco seasoning mix
- 2 cups shredded Mexican cheese blend
- 1 (6 oz) can crushed tortilla chips
- Optional: Sour cream for topping
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet over medium heat, cook ground beef and onion until beef is browned. Drain off any excess fat.
- Stir in tomatoes with green chiles, black beans, corn, and green chiles. Add taco seasoning mix and stir until combined.
- Spread mixture into a 9x13 inch baking dish. Sprinkle cheese over top.
- Bake in preheated oven for 25 minutes. Sprinkle crushed tortilla chips over top and bake an additional 10 minutes, or until cheese is melted and bubbly.
- Serve with sour cream if desired.
