Ingredients
- 2 cups all-purpose flour
- 2/3 cup rolled oats
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cut into small cubes
- 1 cup fresh or frozen berries
- 1 egg, lightly beaten
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, combine the flour, oats, sugar, baking powder and salt. Cut in the butter with a pastry blender or two knives until the mixture resembles coarse meal.
- Add the berries and mix gently to combine. In a small bowl, whisk together the egg, cream and vanilla. Pour over the flour mixture and stir until just combined.
- Turn the dough out onto a lightly floured surface and knead gently a few times. Pat the dough into a 1-inch (2.5 cm) thick round and cut into 8 wedges.
- Arrange the wedges on the prepared baking sheet and bake for 18-20 minutes or until golden brown.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
