Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup sugar
- 3/4 cup butter, softened
- 2 eggs
- 2 teaspoons vanilla extract
- 2/3 cup almonds, chopped
Directions
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together sugar and butter until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Gradually blend in the dry ingredients until just combined. Stir in almonds.
- Shape dough into two logs about 3 inches wide and 12 inches long, and place on a lightly greased baking sheet.
- Bake for 25 minutes, or until golden brown. Let cool for 10 minutes.
- Cut logs into 1/2-inch slices, and place back on baking sheet. Bake for another 10 minutes, or until golden brown.
- Transfer to a wire rack to cool completely.
