Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 3/4 cup butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup almonds, chopped

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together sugar and butter until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually blend in the dry ingredients until just combined. Stir in almonds.
  5. Shape dough into two logs about 3 inches wide and 12 inches long, and place on a lightly greased baking sheet.
  6. Bake for 25 minutes, or until golden brown. Let cool for 10 minutes.
  7. Cut logs into 1/2-inch slices, and place back on baking sheet. Bake for another 10 minutes, or until golden brown.
  8. Transfer to a wire rack to cool completely.
