- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 cups cooked chicken, cubed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (4 ounce) can diced green chiles
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup salsa
- 1 cup shredded cheese, divided
- 1/2 cup crushed tortilla chips
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Heat olive oil in a large skillet over medium heat. Add onion, garlic, and bell pepper, and cook until vegetables are tender, about 5 minutes.
- Stir in chicken, beans, green chiles, cumin, chili powder, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
- Stir in salsa and 1/2 cup cheese. Transfer mixture to a 9x13 inch baking dish.
- Top with crushed chips and remaining 1/2 cup cheese. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
